Artificial Intelligence Applications to Measure Food and Nutrient Intakes: Scoping Review

Artificial Intelligence Applications to Measure Food and Nutrient Intakes: Scoping Review

The final step involves estimating the nutrient intake based on the identified and quantified food items. This step often leverages databases such as the US Department of Agriculture (USDA) nutritional database to map food items to their nutrient profiles. The integration of AI for this purpose is exemplified by systems like the S2 NI platform, which combines speech recognition and natural language processing to monitor dietary composition from spoken data, achieving high accuracy in nutrient computation.

Predicting Unreported Micronutrients From Food Labels: Machine Learning Approach

Predicting Unreported Micronutrients From Food Labels: Machine Learning Approach

It is well established that many nutrients exhibit synergistic interactions, whereby a deficiency in 1 nutrient may exacerbate or manifest as a deficiency in another, and vice versa. Furthermore, there are strong correlations between the presence of certain nutrients in various foods. For example, vitamin E, a fat-soluble antioxidant, tends to be positively correlated with the fat content of foods.

A Logical Framework (MYGERYFS) for Hospital Foodservice to Prevent Malnutrition Among Geriatric Patients in Hospitals, Malaysia: Protocol for a Feasibility Study

A Logical Framework (MYGERYFS) for Hospital Foodservice to Prevent Malnutrition Among Geriatric Patients in Hospitals, Malaysia: Protocol for a Feasibility Study

Thus, the development of the MYGERYFS is considered an unprecedented approach toward delivering a better health care quality for geriatric patients in hospitals, with an ultimate aim to improve the nutritional status of geriatric patients as well as to reduce further deterioration of nutrient intake among this population. Besides, with the existence of this protocol, there will be a chance to further enhance public hospitals’ foodservice system.

Micronutrient deficiencies can also be caused by infections and chronic diseases that directly interfere with nutrient absorption [4]. The World Health Organization (WHO) contends that micronutrients are important for maternal and child health because they help the body produce hormones, enzymes, and other substances essential for normal growth, development, and functionality [1].
